Marinated feta cheese is a perfect addition to a mezze or any other summer meal. It is incredibly simple to prepare and requires very few ingredients. The olive oil can be used to make fantastic salad dressings once the cheese is consumed.
Marinated Feta Cheese
An 8 oz. block of feta cheese, cut into 1 in. cubes
1 tbsp. herbs de provence
1 tsp. crushed red pepper flakes
1 tsp. thyme
2 tsp. whole pepper corns (any kind works)
Enough olive oil to cover, or nearly cover, the cheese
Place your cheese into a glass jar. Add the herbs and pepper, then cover the cheese with olive oil. It doesn’t have to cover entirely, but your feta should be mostly engulfed. Seal your jar, then turn it upside down a couple of times to distribute the herbs and peppers around the cheese. Refrigerate for 7 hours or overnight. Keep refrigerated.
